NAMES ITALIAN NATIVE AS EXECUTIVE CHEF
EAST PALO ALTO, CALIF. – Alessandro Cartumini has been named Executive Chef for Quattro Restaurant and Bar, the contemporary Italian restaurant located at Four Seasons Hotel Silicon Valley at East Palo Alto, scheduled to open first quarter 2006. Bringing over fifteen years of culinary experience including work in several five-star hotels, Cartumini will oversee Quattro’s kitchen as well as all food service for the hotel.
“With our goal of creating the signature Italian restaurant in the area, it was critical that we find the perfect chef with the credentials and training to succeed,” said Robert Whitfield, general manager of Four Seasons Silicon Valley. “Chef Cartumini is the main ingredient in our recipe for success with Quattro, and we look forward to introducing him and his menus to the community when the restaurant opens,” continued Whitfield.
Cartumini comes to Silicon Valley from Four Seasons Resort in Scottsdale, Arizona, where he served as Executive Sous Chef for the award-winning Acacia Restaurant. He has worked in culinary positions in Milan, Berlin, London, and San Diego.
Italian born, Cartumini grew up in a family devoted to food. His father was a pastry chef, and his grandfather worked in the culinary field as well. He learned much of his trade by reading cookbooks as a boy, and by emulating his family’s talents in the kitchen. At age 14, Cartumini started his apprenticeship with the award-winning Italian chef Sergio Mei.
Following graduation from the Hotel Restaurant School E. Maggia in Stresa, Italy in 1990, Cartumini received a hotel and restaurant operator’s certificate from the Hotel Restaurant School Carlo Porta in Milan in 1992. He then worked in the kitchens of several five-star hotels in northern Italy, before joining Four Seasons Hotels and Resorts, where he has remained ever since.
Quattro will showcase contemporary Italian cuisine, accompanied by an impressive selection of boutique wines from California and around the world. Completely surrounded by floor-to-ceiling windows, guests will enjoy Quattro’s airy, dynamic ambience, including a cozy fireplace which enhances the natural warmth of the rich hardwood floors. With seating for 80 people indoors, the restaurant also offers something rare in the mid-peninsula area---outdoor dining---for up to 75 people, in a lushly landscaped patio featuring a shimmering water wall and outdoor fireplace.
Guests dining at Quattro will appreciate the restaurant’s separate valet parking and entrance, as well as the sleek design highlighted by the soaring limestone wall that runs through the bar and restaurant, extending to the outdoor patio and beyond. Open for power breakfasts, working lunches, Sunday brunches and the cocktail hour, Quattro will transform into a glowing jewel box as the sun sets and dinner is served.
In addition to heading up Quattro, Cartumini will oversee all of the hotel’s food services, including 24-hour in-room dining, refreshments for the rooftop pool, and of course, Four Seasons renowned catering menus and service in the Ballroom and meeting space. “But my focus is on Quattro, ensuring that it offers the premier dining experience that food-savvy locals and discerning visitors alike deserve to enjoy here in the world’s high-tech capital,” said Cartumini.
